BELT Sandwich
Recipe adapted from Tartine and Apron Strings
Ingredients:
sourdough bread, sliced and toasted
pesto mayo
arugula
tomato, sliced
bacon, cooked
fried egg
mozzarella cheese, shredded
pepper, to season
Directions:
- Preheat oven to broil.
- To assemble the sandwich, spread each piece of toasted sourdough with the pesto mayo, place arugula on the bottom piece of the bread. Add the sliced tomato, bacon {amount desired} and fried egg on top of that. Place the top piece of bread on top and layer it with mozzarella cheese and season with pepper.
- Place in the oven and cook until the cheese is melted and lightly browned.
