BASIC COOKING TECHNIQUE:
This cut is perfect for sous-vide: we like to cook it at 130F for 18-24 hours, then sear on a grill or grill pan to finish. Alternately, you could smoke it, roast in a low oven, or braise. Follow any Shoulder Roast recipe but note that the smaller roasts will cook more quickly.
