Foie gras and caramelised pears sandwich
Ingredients: 1/2 baguette - 6 slices half-cooked foie gras - 1/2 pear - 1tsp caster sugar - a handful salad sprouts - 1 tsp apple jelly - mixed pepper and coarse salt (like Maldon salt)
Cut the pear into very thin slices.
Heat up the butter in a pan, put the pear slices and quickly brown on each side. Sprinkle with the sugar and let caramelise.
Let cool down.
Cut the baguette lengthwise and toast it under fairly hot grill.
