Maine Lobster Corn Chowder - 1 quart

Prepare this hearty chowder at the height of summer, when lobster and fresh corn are at their seasonal best.
Preparation - Thaw in refrigerator 12-24 hours.
- Boil in Bag (best method): Place unopened bag in a pot of simmering water and heat for 20-25 minutes.
Stove Top: Pour contents into a pot and heat covered over low to medium heat, stirring occasionally, until product begins to simmer.

- 1 lb Maine Lobster meat (or your favorite kind of lobster)

- 2 2 cups medium yukon gold potatoes, medium
- 1 1/2 2 cups onions
- 3 Celery stalks
- 2 tsp Chives, fresh
- 3 cups Corn, fresh or frozen
- 1 cup Onion
Baking & Spices
- 1/2 tbsp Kosher salt
- 1 tsp Paprika, sweet
- 1 tsp Pepper, fresh ground

- 6 tbsp Butter
- 2 cups Heavy cream
- 4 cups Whole milk
Beer, Wine & Liquor
- 1/2 cup Cream sherry
- 1 cup White wine, dry
