Florentines date back to the early Renaissance. The recipe was created by the chef of Anne de Bretagne to honor her guests from the Medici family (hence the name).
Nantes-based Maison de Florentins was founded by chocolate master Michel Chatillon in the 1960s. The Maison has been true to artisan methods and traditional recipes ever since.
