O-Med Pedro Ximénez Vinegar is a premium Spanish sweet wine vinegar made from the famous Pedro Ximénez (PX) grape. It is one of the richest and sweetest vinegars available, often compared to high-quality balsamic vinegar but with a very distinct raisin-forward character.

Production Process
The grapes are sun-dried on straw mats (a traditional process called asoleo) to concentrate the natural sugars. They are then turned into a very sweet Pedro Ximénez wine, fermented into vinegar, and slowly aged in oak casks. This results in a rich, concentrated, and balanced vinegar.
Best Culinary Uses
O-Med Pedro Ximénez is considered a finishing vinegar and “sipping” vinegar. Popular ways to use it:
• Drizzled over ice cream or desserts (especially vanilla or chocolate)
• On salads (especially with blue cheese, walnuts, or fruit)
• Over roasted vegetables, grilled meats, or aged cheeses
