O-Med Pedro Ximénez Vinegar is a premium Spanish sweet wine vinegar made from the famous Pedro Ximénez (PX) grape. It is one of the richest and sweetest vinegars available, often compared to high-quality balsamic vinegar but with a very distinct raisin-forward character.

Key Characteristics

Flavor & Aroma:

Intense notes of sun-ripened raisins, dried figs, dates, and caramel

Slightly sweet with deep dried-fruit character

Perfectly balanced between sweetness and acidity (not overly sharp)

  Very complex and elegant

Texture & Appearance:

Thick, syrupy, and viscous consistency (similar to aged balsamic)

Deep dark brown / mahogany color

Technical Details:

  Acidity: 7%

Aging: 12 months in American oak barrels using the traditional Solera method

Origin: Made in Andalusia, Spain (grapes sourced from Córdoba)

Production Process

The grapes are sun-dried on straw mats (a traditional process called asoleo) to concentrate the natural sugars. They are then turned into a very sweet Pedro Ximénez wine, fermented into vinegar, and slowly aged in oak casks. This results in a rich, concentrated, and balanced vinegar.

Best Culinary Uses

O-Med Pedro Ximénez is considered a finishing vinegar and “sipping” vinegar. Popular ways to use it:

Drizzled over ice cream or desserts (especially vanilla or chocolate)

On salads (especially with blue cheese, walnuts, or fruit)

Over roasted vegetables, grilled meats, or aged cheeses

As a substitute for traditional balsamic vinegar

  Reduced into glazes or sauces

Pros: Very luxurious mouthfeel, complex sweetness, and excellent balance.

Bottle Size: Usually sold in 250ml glass bottles.
