Milk is very homogeneous in Italy–typically their cheese milk comes from Holstein-Friesian cows; in the United States, our milk also primarily comes from Holsteins. We do have a greater frequency of herds comprised other breeds of dairy cattle and are able to make cheese exclusively from those breeds. With Old Grey Mare Jersey(4-5 lb. wheels or 1 lb. wedges) we have used milk from one of two local Jersey farms. The milk is higher in fat and protein and is yellower than Holstein milk. Jersey milk also has greater cheese yields gallon-for-gallon than standard milk. As with our standard Old Grey Mare, this semi-hard Toma has a smooth curd, slightly salty, creamy interior. The Old Grey Mare Jersey is a younger toma; its creamy texture and mild flavor are very like brie. Old Grey Mare Jersey is delicious on the cheese board, it melts very nicely and can be substituted for any milk cheese in recipes. It is nicely complimented by figs, honey, toasted walnuts for a sophisticated dessert.

The Old Grey Mare name recalls the Busy Bee Ferry operated by Captain James Quick on Cayuga Lake. One of the more noted ferries between King Ferry Station on the east to Kidder’s Landing on the west, Quick provided passage for traffic across the lake during the late 1800’s into the 1900’s. We have named this cheese in honor of all the horses, unnamed in historical records, who supplied power to the paddle-wheel via treadmill when wind failed.
Old Grey Mare Jersey is our traditional toma made with the higher protein and fat milk of Jersey cows. It has a natural rind that can be trimmed or eaten. The Jersey milk lends a softer texture, creamier mouth-feel, and butterier flavor to the traditional toma. Sold by the pound, Old Grey Mare Jersey wedges are vacuum wrapped for transit. We recommend wrapping in cheese paper at receipt for continued maximum quality. Whole wheels can be purchased.
