Prosciutto Wrapped Salmon with Pistachio & Basil Pesto
Ingredients 4 servings:
• 400 g fillet of salmon
• 100 g ham serrano or parma • 400 grams of green beans beans pistachio pesto: • 1/3 cup peeled pistachios • leaves from the mid-bundle (pot) basil • 2 tablespoons grated parmesan or grana padano • 4 tablespoons olive oil fast orange sauce to the beans: • 1/4 cup white balsamic vinegar or wine vinegar• 100 g orange jam
Preparation:
- Preheat oven to 190 degrees Celsius . zest Cut the salmon , then cut it into strips with a width of about 3 cm, season lightly with salt. Crush the pesto ingredients in a mincer and put them on top of the fillets. Wrap them in ham and place in an ovenproof baking dish. Put into the preheated oven and bake for 20 minutes.
- Bean toss salted boiling water and cook for 7 - 8 minutes, then drain. In the meantime, cook rice or potatoes if you will be given.
- Orange sauce: Pour vinegar into a pan and cook for a few minutes until it reduces by half, then add the orange jam and cook for another 1-2 minutes. Beans pour orange sauce and serve the salmon. Sprinkle with freshly ground pepper.
