These Spinach, Egg, and Cheese Breakfast Bites are such an easy breakfast and are great when you are on the go!

Ingredients
  • 7 eggs
  • 1/4 tsp. salt
  • 1/4 cup milk
  • 1 cup grated cheddar cheese {I prefer mild}
  • 1 cup roughly chopped spinach
  • 3/4 cup Parmesan cheese
 
Instructions
  1. Preheat the oven to 350ºF. Grease a 12-count muffin tin with cooking spray and set aside.
  2. In a medium bowl, whisk the eggs until smooth.
  3. Add the salt, milk, cheddar cheese, and spinach and mix well.
  4. Spoon the mixture into the muffin tins and fill about 2/3 of the way.
  5. Top with Parmesan cheese.
  6. Bake for 20-22 minutes, or until the edges become golden.
