Ingredients:
- 8 ozs kale, destemmed and chopped
- 1 cup carrot, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 spring onion, finely chopped
- 1/4 cup peanuts for garnish
- For Creamy Peanut Sauce
- 1/4 cup creamy peanut butter
- 1/4 cup water
- 3 tablespoons lemon juice
- 2 tablespoons coconut palm sugar or sweetener of choice
- 1 tablespoon coconut aminos or Bragg’s liquid aminos
- 1 tablespoon olive oil
- 4 cloves garlic
- 1/2 inch fresh ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sea salt
Directions:
Arrange salad in a bowl, toss with peanut sauce and garnish with peanuts and serve.
