Trout Amandine
Trout served in a butter, lemon and almond sauce that is quick and easy for a weeknight meal and sure to impress at dinner parties!

- 2 tablespoons butter
- 2 (6 ounce) fish fillets such as trout, sole, haddock, etc.
- salt and pepper to taste
- 2 tablespoons butter
- 2 tablespoons lemon juice (~1/2 lemon)
- 1/4 cup almond slices or slivers, toasted
- 1 tablespoon parsley
- salt and pepper to taste
Directions
- Heat the butter in a pan over medium heat until it is bubbling, add the fish, cook until cooked, about 2-3 minutes per side, and set aside.
- Add the butter to the pan and cook until it browns, about 2-3 minutes.
- Add the almonds and cook until lightly toasted, about 2-3 minutes.
- Add the lemon juice and parsley, season with salt and pepper and remove from heat.
- Serve the fish covered in the sauce.
Tip: Season the fish with a touch of creole/cajun seasoning for something a little different.
