Twisted pizza e tutti quanti!
Ingredients: 400g bread dough (or pizza dough) - 100g very fine slices of cured ham - 2 or 3 Tbsp black olives, stoned - 2 peppers in brine - 1 small bunch basil - Parmesan cheese - olive oil - salt & pepper
Roughly chop all the ingredients: ham, olives, peppers and basil.
Add 2 or 3 Tbsp of finely grated Parmesan cheese and mix everything together.
Stretch the dough into a long sausage, about as thick as the thumb. Twist the dough, it looks nicer and it prevents it from retracting.
Roll the dough into a snail shape, leaving some space between the wholes (barely 1/2 cm but don’t worry if it’s not even, it’s almost impossible to do evenly, anyway).
Spread the ham mixture between the rows. Check on the picture what it is supposed to look like. Finish with a drizzle of olive oil, a little salt (a little, the ham is already salted), and pepper.
Allow to prove at room temperature for 30 minutes.
Put in the oven, preheated at 200°C/390°F for 20 to 25 minutes, or until golden and crunchy.
Straight out of the oven, sprinkle some Parmesan cheese on top and a handful of basil leaves and serve immediately, it is at its best now.
